I had such a good time making my favorite cookie recipe with raw Hawaiian honey a few weeks ago so I tasked myself with finding other new honey recipes to try out. I think I must have a fondness for cookies because the first recipe I was drawn to was this one for Honey Lemon Basil Walnut Cookies.
This cookie recipe is great because it keeps the honey in its raw state instead of cooking it. Raw honey contains helpful digestive enzymes. Heating raw honey can remove these enzymes so there are considerable health benefits to consuming raw honey.
It’s fun to be able to eat something sweet and have it be good for you!
I found this recipe super easy. There’s no baking so it’s just about gathering and mixing the ingredients.
If you want to make these cookies at home you’ll need:
2 cups or 200g of walnuts
3 tablespoons of honey
2 teaspoons of grated lemon peel
2 teaspoons of fresh finely chopped basil
This recipe made 16 delicious raw honey cookies.
First I roasted the walnuts for 5 minutes in a 350°F or 180°C oven. This helps to eliminate some of the walnut’s natural bitterness.
Then I let the walnuts cool before pulsing them in a blender. Walnuts release oil and become almost buttery in texture when blended so be careful not to pulse them too finely if you are baking along at home!
Next I poured the walnut mixture into a bowl and added the raw Hawaiian honey. I used our raw Wildflower honey for this recipe. This honey is fruity and floral. It is golden and sweet.
At this stage I also added the lemon peel and chopped basil. Luckily I have some basil I grew myself!
Then I stirred the ingredients with a wooden spoon until the mixture came together like a crumbly dough.
I portioned the cookies out using a teaspoon and rounding them in my hands.
I flattened each cookie using a fork in a sort of crisscross pattern.
Then I chilled the cookies in the fridge for an hour.
I eat two or three sipping on a cup of tea after gardening in the morning. They are sweet and nutty. The basil and honey flavors play well with each other. The savory note actually makes the honey taste even sweeter!
I will definitely be looking for more raw honey recipes to test out in the future. It’s fun to eat good food!
